Nose

Salted caramel ice cream, some vanilla here too. Sherry soaked raisins and wet walnuts. Then TUC cheese crackers, smoked pork loin and pumpkin chutney. There’s gentle hints of wood smoke.

Palate

That wood smoke hits first, then a stab and tart quince jelly and aged Cheddar cheese. Plum pudding with lashing of rich, creamy custard. Golden Treacle on warm toasted rye bread.

Finish

Sweet and sour, but with honey roasted cashew nuts.

A Highland little cracker. Big bodied with plenty of character.
