Taster

Nose: Bright tropical fruit bowl, some dried papaya chunks, a hint of nail varnish remover, green tomato stalks and smooth toffee.

Palate: Much more herbal here, with smooth sage and heather, custard cream biscuits, a little more papaya. Then elderflower and fruit loaf, met with fresh ginger spiciness.

Finish: Spice lingers here and becomes heathery as it fades out.

Comment: Punchy and packed full of flavour until the finish became very delicate.

Taster

Nose: Lemon, lime and orange boiled candies. Golden syrup drizzled over Scotch pancakes, with a dollop of whipped cream. Elderflower cordial and honey water, with Cantaloupe.

Palate: The honey, whipped cream and pancakes are here in force, but with slices of salted toffee sauce–coated banana and poached pear. Some crushed peanuts and sweet shortcrust pastry, too.

Finish: Medium-long, on banoffee pie.

Comment: Perfect harmony of spirit and oak. Excellent.
