Standard (Distillery or blended)
Nose: Cut grass and emulsion paints, dandelion and burdock tea, and blueberry jam. Concord grape drink and aloe vera. Underneath, some toffee and hot mash notes.
Palate: Light. Wholemeal loaf, perhaps with rye. Roasted sunflower seeds. Sesame and chia seeds. Subtle chocolate sponge cake and sticky caramels. Chalk milk sweets. A mineral note. Rice cake.
Finish: Medium. On malted milkshake.
Comment: Spirit character comes first here, which is what we want from the style. Well done.
Nose: Lemony, peppery, and slightly herbaceous. Hints of smoked charcuterie and Vegemite. Grapefruit juice and white grape. Instant coffee granules and the sourness of cream cheese.
Palate: Light-medium. Almond frangipane and fondant icing. A little black cherry jam and tinned pear. Bay leaf and cooked fennel. Oily focaccia. A hint of lactic sourness is still there.
Finish: Short-medium, finishing on savoury herbs and that fondant icing.
Comment: The savoury undercurrent added interest and complexity.
