Taster

Nose: Foam bananas and rum-soaked raisins. Then vanilla buttercream on a vanilla sponge cake, a hint of salinity and bay leaf.

Palate: Soft vanilla sponge returns. It gets very herbal, with heather honey and more bay leaf. A drizzle of honey on toasted farmhouse loaf and a hint of tobacco.

Finish: Medium. Spicy, with cinnamon stick and more of that tobacco and fruit and nut bar.

Comment: Although the palate starts a little shy, it becomes very well balanced and full of intrigue.

Taster

Nose: Hard caramels, dried apple, dried apricot, and heather honey. Subtle sweet cereal notes, malted milk and oat biscuit. Delicately grassy. Lime juice and meadowsweet. Somewhat mead-like.

Palate: Very light. Sweet vanilla syrup, all-butter croissant with icing sugar and apricot jam. Some subtle bisongrass. Lemon sherbet in rice paper casings, too. Some cinnamon spices.

Finish: Short, on honey over green apple.

Comment: Soft, summery and comforting. Immensely easy-going.
