Taster

Nose: Hints of damp pine forest floor, with gorse bush and elderflower. Vanilla butter cream icing and plums infused with sage and honey.

Palate: Earthy peated hints with peppermint, overripe white berries, floral with hints of essential oils, cedar wood and sage.

Finish: Hot and long, leading into a slightly jammy ginger conserve, with pine needles.

Comment: It’s full of surprises. It’s pretty hot hot hot, but does still allow the complexity to make itself known. A little water did make all the difference.

Taster

Nose: Grassy and perfumed with heady florals. Cut grass, lily pollen, fresh root ginger, rose, and treacle tart. Lemon zest and New York cheesecake.

Palate: Full and mouthcoating. Fresh peach, chamomile tea with ginger and lots of honey. Mandarin juice and vanilla custard, with a drizzle of caramel sauce. Some earthiness and background peat.

Finish: Long, on mandarin juice. Dries on chamomile.

Comment: A summer dessert table. Really very juicy, it made my mouth water.
