Creamy and smoky, like a burnt cheesecake. Woody rosemary. Barbequed pork and nectarine slices. Grapefruit peel. A little wood varnish. Sweet brioche dough and chocolate-hazelnut spread.

Palate

Medium. Charred sage and rosemary with more barbequed pork. Hazelnut latte and gianduja. Poached pears with spiced syrup (cinnamon, clove, orange peel, vanilla), and clotted-cream ice cream.

Finish

Medium-long, on toasted hazelnuts, mint stalks, and sweet smoke.
