Taster

Nose: Right back into the farmyard. Hay mulch, fresh-cut barley and turned earth. A little whiff of sulphur, spent match and maturing tobacco leaves. Some fruits but all dominated by the farmyard.

Palate: Smoke becomes more dominant. Some fresh, hot croissants and butter. Lime marmalade. Chargrilled pineapple and mango.

Finish: Lengthy and punchy, with water there is more smoke.

Comment: Back the alcohol down with water and some more sweetness emerges.

Taster

Nose: Parmesan shavings and grilled tomato, brie and bacon sarnies and straight from the oven sausage rolls. Old hardback books and just a wisp of lemon meringue pie.

Palate: A blast of sulphur overpowers the palate, with charcoal smoke and wilted spinach peeking through. An addition of water allows a creamy citrus flavour to come through but only slightly.

Finish: An oiliness coats the entire palate and a vegetal saltiness lengthens the finish.

Comment: One for the cheese lovers and not for the faint hearted.
