Nose

Charred salmon with sweet beets and a glass of red wine. Anise and liquorice stick, followed by smoked cheese and raspberry jelly with milk chocolate.

Palate

The raspberry is here, with smoked almonds and lemon boiled sweets. A touch of red bean paste and coconut ice.

Finish

Medium length, with roasted red apples.

Comment

Dinner at a sea-side restaurant. An enjoyable balance of smoky and fruity flavours that is out of the ordinary.
