I feel the new oak, heavy char has played its part but water has pulled it apart.
New Holland Artisan Spirits

Standard (Distillery or blended)
Nose: A little shy at first and then Weetabix, wine gums and Tiger Balm. Warm woody notes like cedar.
Palate: Chewy caramel and red fruits. Some sweet spiciness but artificial. I need more from this.
Finish: Grippy then lost its bite.
Comment: I feel the new oak, heavy char has played its part but water has pulled it apart.
Nose: Grassy and oaky. Grass stalks. Caramelised apples. Hot custard. Sap, paint and some varnish.
Palate: Sweet at first then spicy and oaky. Not very dissimilar from the previous sample but spicier than it.
Finish: Dry and spicy.
Comment: Here again, the wood is overwhelming and the alcohol biting. A spicy character on the palate. It does need water but that does not enhance the flavours.
