Taster
Nose: A chimney full of wood smoke, hickory, barbecued brisket, and plum sauce. The hot wood of a sauna. Dark chocolate, almonds, and macadamia nuts.
Palate: Full bodied. Smoked venison served with plum and red wine jus, before a delicate iodine note wafts in and out. Then comes apple pie with lots of muscovado and a retronasal pine aroma.
Finish: Medium-long, on sweet smoke.
Comment: One to give the Ileachs a run for their money.
Score: 8.2
Taster
Nose: Apple, strawberry, kiwi, and raspberry. Brioche French toast, icing sugar, and brandy snap. Slightly burnt wholewheat toast, honeyed granola with skimmed milk, and a little hazelnut butter.
Palate: Medium. Mocha sponge cake. A hint of unlit tobacco. Freshly made strawberry jam, black cherry, and damson. Hazelnut praline. Black tea and condensed milk. Freshly squeezed lemon juice.
Finish: Long. Blackcurrant crumble, and a sweet barbecue-smoke note like jerk chicken.
Comment: This revealed a darker side that I enjoyed exploring.
