Taster

Nose: Barbecued meats and sauce. Chilli and ginger-marinated chicken, thick sliced rump steak and garlic prawns all grilled over cherry wood.

Palate: That meat-laden barbecue comes flooding in, but also sweetness with blackberry compote and fig jam. Pork crackling and apple sauce.

Finish: All that smoke and sweetness wraps together and dries, leaving crispy bacon and tomato sauce.

Comment: I would have this when tending to the barbecue, even chuck some over the meat as it cooks. Awesome stuff.

Taster

Nose: Smoky and meaty, like opening a fresh pack of jerky, or tucking into barbecued pulled pork. It’s briny, a touch sulphury and rubbery, but with sweetness from PX sherry, currants and Christmas pudding.

Palate: Meaty still, both in texture and flavour. Rich sherry (water releases a touch more sweetness and sulphur), bitter currrants, citrus peel and Marmite.

Finish: Lingering smoked meats.

Comment: A very savoury whisky that could easily be mistaken for a Scotch malt.
