Nose
Light and oily, like sour cream and olive oil. Buttery banana bread sponge cake topped with toffee icing. Dried apricot and dried red apple slices. Chopped walnuts.
Palate
Medium bodied and silky, but concentrated. Pear with muscovado, grape must, sour gooseberry and raspberry, clove spice and fennel. With time, toffee sauce and chocolate chip cookie. Subtle allspice, fruity esters and raspberry leaf.
Finish
Medium-long. Oily and creamy.

Complex and shifting, with a core that remains familiar.
