Taster

Nose: Sweet and gentle. Pecan and caramel pie. Treacle tart with hot vanilla custard on the side. Caramelised apple flan. More pastry notes emerge with almond croissant. A little lilac floral notes. The oak shines through.

Palate: All the sweetness roll through. Almond paste and apricot jam. A touch of spun sugar. Oak starts to grip, pencil shavings and fresh sawdust.

Finish: Long and engaging, ends with a gentle chilli bite.

Comment: Oh Canada! If you haven’t cottoned on to what’s happening here, now is the time.

Taster

Nose: Almonds, marzipane and bakewell tarts in general. There’s a hint of key lime pie in the mix too.

Palate: Sugar syrup and fruit salads. Light and refreshing. Caramel popcorn and a bright floral note to finish up. With water there is a greater oakiness to it, that brings a little savoury note.

Finish: More of the floral note – herbaceous and gentle menthol. Long and lasting.

Comment: Well balanced and good harmony between all the prominent notes.
