Nose: Lovely orchard fruit notes, with slices of green apple stewed in cinnamon and honey. A hint of pear drop and scraped-out vanilla pod.
Palate: Orchard fruit notes are still there, but moving into rich red berries, again stewed in cinnamon. Toasted farmhouse loaf with honey.
Finish: Long lasting, with rich dark berry notes and cinnamon staying with you to the end.

Taster
Nose: Dried figs, prunes, and apricots. Fruit cake packed with cherries and raisins, with candied orange and fondant icing. Cinnamon and nutmeg through hot, foamed milk.
Palate: Medium-full, with some heat. The fruit cake element is upfront – raisins and tea cake. Some sweet black tea with lots of blossom honey. Honey-coated granola, with dried apple and orange pieces. Candied pecan, too. Lots of Christmas cake spices, especially cinnamon.
Finish: Long, on the sweet fried fruits.
Comment: A big and bold pot still.
