Tasting Notes

Dave Broom

Taster

Nose: Heather honey with smoke underneath. Salty again but everything softened by oak. Wet sails, oilskins, cough sweets, bitter orange peel, white peppercorn and Lochaber smoked cheese. Mature and rich. Complex.

Palate: Multifaceted, rounded and harmonious. Smoke is there but also a dense savoury fruitiness. Great balance.

Finish: Elegant and long with a little pepper.

Comment: Bold, subtle, sweet yet smoky. Class.

Score: 9

Taster

Nose: Melon and sweetened, stewed rhubarb. Dark chocolate sauce, roast hazelnuts and some Dettol medicinal notes.

Palate: More of that chocolate, some quite astringent tannins and chilli spice.

Finish: Brooding smoke and a little salty chlorine. Possibly a light soapiness too.

Comment: Certainly complex, and a phenolic element that wove slyly in and out of what was a coastal experience.
