Nose
Spiced Christmas biscuits, salted caramel, poached pears, and vanilla sugar. A faint whiff of wood-scented candle. Raw pizza dough, clove, and brioche bread and butter pudding.
Palate
Light-medium. Brioche, burnt raisins, 100 per cent cocoa chocolate, and tea with milk and honey. Herbaceous rosemary, and a hint of roast lamb. Caramel and sweet oat biscuits.
Finish
Medium-long, on lamb, wet mint, and some fresh apple.
Comment
Complex, with a nice balance between savoury and sweet.
