Nose: Straw-like, then immensely smoky; chimney sweep's sack, engine oil. Water calms it down, brings out lentil, sweetness, pine wood and a zestiness.

Palate: A fug of smoke. Thankfully there's a sweetness beneath and a bracken-like note to balance.

Finish: Smoke and more smoke. Tarry.

Nose: Leafy bonfires in autumn. Pine logs.

Palate: Starts sweet and nutty. Development of oily, soothing, smoky flavours.

Finish: Firm, gripping, balsamic. Appetising.

Comment: Why wasn't this done years ago? More please. Captivating.
