Medium. It’s afternoon tea! Victoria sponge with strawberry jam and buttercream, crumbly fruit scones, oaty milk chocolate-chip cookies, and hints of fruit tea and manuka honey. Underneath, orange-peel oil and sweet-potato crisps.

Finish

Medium-long, on rooibos tea and fresh strawberry.
