Nose: Honey-roasted ham hock and balsamic vinegar. Honey, a hint of smoke, then rich fruity notes of preserved plums and marinated figs, then a little vanilla ice cream.
Palate: The gorgeous marinated fig note follows through to the palate alongside Parma ham, gentle oak, olive oil, black pepper and dark chocolate.
Finish: Long rich olive oil and gentle black and white pepper spice.

Taster
Nose: Delicate peat smoke appears in the form of smouldering heather, with a faint, salty seaweed, samphire vibe. There’s a green, agave quality to it, reminiscent of a reposado mezcal.
Palate: Green and youthful, with lots of bright fruit and an earthy, coastal smoke. Dry spice picks up, bringing with it a creamy vanilla character.
Finish: Agave, aloe vera and a gentle smoke lightly kissed by vanilla ice cream.
Comment: If South Africa were ever to discover that it has Mexican roots…
