Ricotta and fried pastry, with pistachio and candied pumpkin. Marzipan and candied orange on a vanilla sponge with pears poached in caramel sauce. Like Sicilian cassata cake.
Medium. Fresh apricot, peach and caramel. Intense baked apple and pears with sweet icing and marzipan. Subtle citrus peels over sweet shortcrust pastry, just starting to burn.
Long and sweet, on the candied fruits.
Complex and mature-tasting. This is some serious quality from England. Bravo!
