Taster

Nose: A lovely combination of aromatic smoke and light heathery honey interspersed with aniseed.

Palate: The anise has become more like humbug sweets, with a hint of peppermint freshness, then it’s thick honey spread on rye (slightly overdone in a good way) toast.

Finish: The anise is the real lingering factor here, smoothed out by the honey.

Comment: I really, really like this – it’s different and full of character that could so easily not work but it does and is delightful.

Taster

Nose: Wafts of peat smoke, pear drop, capsicum, eucalyptus oil and sage. Frying fish and olive oil, dried hops, grapefruit peel and serrano ham.

Palate: Full. Tart green apple, baked pears that have been smoked and built into an indulgent frangipane (almond cream) tart. Vanilla custard, cinnamon bun with lots of icing, and Swedish cardamom doughnut (Skolebrød).

Finish: The intense baked pear and caramel sweetness fades to woodsmoke.

Comment: Like eating the contents of a Swedish bakery.
