Nose

Wafts of peat smoke, pear drop, capsicum, eucalyptus oil and sage. Frying fish and olive oil, dried hops, grapefruit peel and serrano ham.

Palate

Full. Tart green apple, baked pears that have been smoked and built into an indulgent frangipane (almond cream) tart. Vanilla custard, cinnamon bun with lots of icing, and Swedish cardamom doughnut (Skolebrød).

Finish

The intense baked pear and caramel sweetness fades to woodsmoke.

Like eating the contents of a Swedish bakery.
