This week, the cocktail we're mixing up comes from Highland distillery Fettercairn, which last year celebrated its 200th anniversary. “The idea was to create a whisky version of a Gimlet and it sort of evolved into this,” explained Andrew Lennie, global single malts specialist for Whyte & Mackay (and Icon of Whisky Scotland 2025!).
He added that the cocktail was “inspired by the key flavours we find in the spirit at Fettercairn — tropical fruit, nutty cereal, and a mouthfeel of coconut wax.”
Ingredients:
30ml Fettercairn 12 Years Old
10ml Fino sherry
10ml Lillet Blanc
15ml lemon juice
10ml barley syrup (two parts sugar to one part strong barley tea)
Pipette of vegan foamer
Method:
Shake all ingredients well with ice. Double strain into a Nick & Nora glass and garnish with a lemon twist.
