The Lakes Distillery has launched its new flagship whisky. Signature is the distillery's first permanent sherry-led single malt whisky.
Crafted by whisky maker Sarah Burgess, Signature uses the distillery's élevage system — a technique used more often in wine and Cognac. Through élevage, the way in which the whisky ages is altered in order to accentuate the "desired characteristics" within the liquid. For the Lakes Distillery, this includes changing the location and climate of maturing casks, moving the liquid to different cask types, and combining whisky from various casks.
Burgess commented: "At the Lakes Distillery, we’re inspired by the beauty of our surroundings; and Signature reflects that. The whisky is the result of an incredible journey of flavour exploration, shaped by the seven editions of our Whiskymaker’s Reserve series.
"The art of élevage and sherry cask ageing have allowed us to create a remarkable whisky that is rich with exceptional layers of flavour. Our first permanent style, Signature is a proud milestone for us all."
The distillery says the whisky has flavours of dried fruits, pecans, dark chocolate, baking spices, and citrus. The Lakes has previously explored sherry maturation in its Elements collection.
Based in the Lake District, the Lakes Distillery was purchased by English winemaker Nyetimber last year. It is a member of the English Whisky Guild, which earlier in 2025 submitted an application for English whisky to receive a geographical indication.
The Lakes Distillery Signature is bottled at 47% ABV and is available at RRP £85 via lakesdistillery.com and selected retailers.
